Green beans are my all time favorite vegetable. Every single way I have ever had them I have loved. This recipe came about when I found a can of whole potatoes in the cupboard and wasn’t sure what to do with them. They work perfectly here.
If you have fresh potatoes that you want to use up, they can be used as well. Just make sure you parboil them first. They don’t sauté long enough to cook all the way through.
These would make a great side dish with my Herb Butter Roasted Chicken recipe.
Sautéed Green Beans with Baby Potatoes
Ingredients
- 1 lb green beans fresh, ends trimmed
- 15 oz can whole potatoes
- 1 small onion diced
- 1 tbsp butter or oil
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- salt and pepper to taste
Instructions
- Place green beans in a sauté pan and add enough water to barely cover them.
- Bring to a boil then reduce to simmering, uncovered.
- Simmer just long enough to soften beans without overcooking, about 7 minutes.
- Drain any water that hasn't evaporated.
- Remove beans from pan and add butter or oil.
- Add the onion and sauté until translucent but not browned.
- Sprinkle in the garlic powder and paprika and stir.
- Add the potatoes and beans to the pan and continue to cook until heated through, about 10 minutes.
- Serve immediately.
