Working in a restaurant in a small town has its perks. I was gifted a bag of these beautiful banana peppers from a local farmer. I wasn’t sure what to do with them, but since I have always wanted to make a Mississippi pot roast I thought I would give it a whirl. After looking up plenty of recipes on Pinterest I found that they were all very similar and used a packet of ranch dressing mix. I decided to make my own seasoning blend instead and with a few other small adjustments, this slow cooker pot roast recipe was born.
What Meat Is Used For Slow Cooker Pot Roast?
A traditional Mississippi pot roast is cooked with a chuck roast. The chuck roast is cut from the shoulder of the cow and is a very tough cut of meat. It works perfect for this slow cooker pot roast recipe because the longer cooking time will allow for the meat to breakdown and become very tender.
I used a top round for this, mostly because it is what I had on hand. Feel free to use any cut of meat that will allow for a longer cook time. Pork butt or chicken are also good choices and will allow for different flavor profiles.
Ingredients Needed For Pot Roast
One of the best things about using a slow cooker is you can literally throw all the ingredients in and let it cook all day. For this recipe you will need…
- Choice of Meat. There is no wrong answer here. Top round, chuck roast, pork butt, chicken thighs, and so many other options are available. Pick one and go for it.
- Beef Broth. I only use a small amount just to make sure the meat doesn’t dry out. If you are using a cut with plenty of marbling or fat, feel free to skip the extra broth.
- Whole Peppers. Many of the recipes for Mississippi pot roast called for sliced pepperoncini peppers. I prefer to leave them whole so that when they cook down they don’t disappear into the mix. I want to see them on my plate. You can absolutely use any pepper you like.
- Seasoning Blend. Look, I love a good ranch dressing mix as much as the next gal, but sometimes I like to have a little more control over the ingredients I am using. This blend I came up with was perfect in this dish.
- Butter. Adds richness, moisture and depth of flavor. And because butter makes everything better.
What To Serve With Pot Roast
The best side dish, in my opinion, for a pot roast is mashed potatoes. I’m a sucker for a plate of instant mashed potatoes. (SHH don’t tell anyone). But if you want to really impress your dinner guests, I highly recommend these Roasted Garlic Mashed Potatoes.

Southern Slow Cooker Pot Roast
Ingredients
- 1- 1 1/2 lb top round steak
- 4 whole banana peppers
- 4 tbsp butter cut into chunks
- 1/2 cup beef broth
- 1 tsp dried dill
- 1 tsp dried parsley
- 1 tsp dehydrated onion
- 1 tsp dehydrated garlic
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- In the bottom of a large crockpot, add the beef broth, banana peppers and round steak.
- Combine all the seasonings in a small bowl and sprinkle over the top of the steak.
- Scatter the butter over the top of the meat.
- Cover and let cook on low 8-9 hours, or on high 4-5 hours.
- Uncover, shred the meat with two forks and stir to coat in all the juice.
- Serve with mashed potatoes or your favorite side dish.
