If you are anything like me, you think the chips and salsa are the best part of any Mexican meal. Nothing wrong with a traditional restaurant style salsa, or even a classic pico de Gallo, but if you try this sweet and spicy pineapple salsa, I promise you won’t be disappointed.
What Ingredients Are Needed For Pineapple Salsa?
Unlike a traditional salsa that has a base of tomatoes, the key to this sweet and spicy salsa is the combination of pineapple chunks and diced jalapeño. The technique is different than a tomato based salsa because you won’t be using a blender. Just make sure to dice all your ingredients as small as possible.
- Pineapple- Start with chunks of fresh pineapple if possible, however if you have canned pineapple chunks you can use those, just dice them a little bit smaller.
- Jalapeño – Remove the seeds and ribs before dicing if you don’t want it too spicy. You can use any kind of pepper you like for whatever heat intensity you prefer.
- Onion- I like to use white onion, but red onion would add a beautiful pop of purple color to the finished product. Again, use what you prefer.
- Red Bell Pepper- This is another ingredient of personal preference. I like red pepper for the color contrast it adds. You can also use green, yellow, or orange if you like one of those.
- Lime Juice- Squeeze the juice from fresh limes preferably, but if you have bottled lime juice it works just as well.
- Cilantro- This is one of those things that people either love or hate. I personally don’t mind cilantro if it doesn’t overpower the dish. Use to your liking, or leave out if you don’t care for the taste of it.
How To Serve Sweet and Spicy Salsa
Some of my favorite ways to enjoy this salsa are:
- On top of shredded chicken tacos.
- Inside of a bbq pork quesadilla.
- As a dip for tortilla chips.
- Great as a topping on vanilla ice cream.
- As a burger topping for a Mexican style burger.
Sweet and Spicy Pineapple Salsa
Ingredients
- 1 cup pineapple diced
- 1 jalapeno finely diced
- 1/2 red bell pepper finely diced
- 2 tbsp onion finely diced
- 1 tbsp lime juice
- fresh cilantro, optional to taste
- pinch salt and pepper
Instructions
- Combine all ingredients in a bowl and chill until ready to serve.
